I created gougeres for a little Christmas Eve party, and they were begging for something to fill them. I gave them to the guests. When it comes down to it, gougeres are nothing more than cream puff pastry that has cheese and/or other stuff added to it. Despite the fact that they are delectable on their own, they are similar to cream puffs in that they contain a hollow inner core. When I was attempting to come up with something to fill them, I once again became interested in beans. I needed a filling for some tiny cheese cups that I prepared throughout the summer when I was making them for an appetizer. After grabbing a can of white beans, I placed them in a strainer and allowed them to be soaked in cold water for around five minutes. This causes a significant amount of the additional salt that was included in the canned food to be released. Following that, the beans are placed in the food processor, and I add anything I think would be a nice addition at the time. A tiny jar of roasted red peppers, eight ounces of cream cheese, some garlic, and fresh rosemary from my garden that had been drained and diced were the ingredients that I utilized at that time. The food was really mouthwatering. I have lately begun using a can of kidney beans, to which I have added some goat cheese and cream cheese, as well as garlic and fresh thyme that has been diced. The result was a sweet and beautiful pink spread. These may also be used as a dip for crackers, and any of them can be utilized. A can of chickpeas may also be used to make hummus, which is a kind of dip or spread. The filling for my gougeres was something I created today. I used a can of white beans that had been well rinsed and drained, and then I went ahead and placed them in the food processor along with four ounces of cream cheese and a mild goat cheese such as chevre or montrachet cream cheese. Two teaspoons of dijon mustard, two teaspoons of capers that had been drained, a sprinkle of white pepper, and a quarter of a teaspoon of salt were added to the mixture. This filling is given a piquancy by the capers and the mustard, which should be able to stand up to the tastes of the roasted red pepper, garlic, and grated pecorino that are found in the gougeres. While it is true that not all of these conceivable bean recipes are made into a paste, it is also true that they are delicious when made in this manner. A can of beans is used as a foundation for a variety of spontaneous salads, such as a black bean salsa, which is also an excellent choice for a side dish. Caviar from Texas is a kind of dip that is created using black-eyed peas. The combination of black beans, sliced tomato, and avocado might make for a delicious and speedy salad. Throw in some chopped bacon that has been fried. After sautéing some onion that has been cut very thinly until it is soft, add one teaspoon of vinegar and one teaspoon of sugar and mix. To blend the ingredients, pour this over the mixture and toss it. On the other hand, the fact that beans are so tasteless is precisely what makes them the ideal backdrop for other tastes that are more vibrant. Bacon is always a lovely addition to a cheese ball, spread, or dip, and cooked bacon that has been finely diced is amazing in any of these fillings or dips. Consider using fresh herbs since they may impart a variety of tastes and even color, depending on the amount that is used. A nice spread that is light green in color might be made by combining white beans with a fair handful of either cilantro or parsley, or both, along with some cream cheese and perhaps some garlic. It is possible that one recipe for fudge is the most odd way to utilize a can of beans; yet, due to the blandness of the beans, they make an excellent filler and give the fudge body. Consider one can of pinto beans that has been thoroughly drained and washed under running water for a period of five minutes. Place in a food processor after draining well. Incorporate one cup of cocoa powder, one tablespoon of vanilla, and three-quarters of a cup of unsalted butter that has been melted. Prepare this into a paste that is very fine. The paste should be transferred to a big basin, as well as a heavy-duty stand mixer, if possible. After adding in two pounds of confectioners’ sugar and mixing until it is almost entirely included, add in two cups of chopped nuts of your choosing and continue mixing until it is totally incorporated. The mixture should be pressed into a pan that is 13 inches by 9 inches and the top should be smoothed down. Place in the refrigerator until it has hardened, and then cut it into pieces. It is impossible for anybody to believe that this fudge contains beans since it is so wonderful. Be your own unique combos with this adaptable staple, and make sure to use your imagination. It is always vital to include a nutritional complement to a meal, and since it is so simple to make such delicious dips and spreads, some of which even include fudge, there is no excuse not to give them a try.
