Ewout Huibers, photographed by Sarita Rupan and provided by Concrete, an architecture firm based in Amsterdam, has designed a waterfront restaurant that takes its inspiration from an artisan kitchen. The restaurant successfully combines the renowned expertise of the chef with unconventional design elements. It is located along the picturesque IJ Waterfront in Westerdok Amsterdam, and the restaurant is called Nevel. Nevel creates a seamless connection with its surroundings through a dual dialogue: one with nature, as it opens via floor-to-ceiling clear glass walls to the waterfront on one side and to the forest on the other; and with the artisanal culinary skills of renowned chef Ricardo van Ede, who only uses seasonal and low-quality products from the land and sea. There is a need for a trademark in the atmosphere of every restaurant, an identity that identifies the style of the establishment, and the signature of Nevel centers on the culinary specialist serving the establishment. The highlight of the eatery is the display of the tools, which include jars and bottles of ingredients that are displayed on open shelving made of whitewashed oak wood with brass inserts. These jars and bottles are filled with the chef’s signature piccalilli and chutneys, and they serve as partitions with seating integrated around them. In addition to this, the atmosphere of the open café is created by the placement of private dining areas and the bar in niches. These niches provide guests with the opportunity to enjoy a cozy and homey atmosphere, while also incorporating dramatic elements such as large hanging fixtures that are interspersed with subdued lighting. In order to create a neutral envelope for the busy atmosphere to play upon, the color and material palettes consist of light tones of stone-clad facades, white furniture with beige upholstery and drapes that are fixed in between natural wood floors and a dark ceiling. This is done by taking a cue from the textures and flavors of the ingredients. An enticing flow of natural light and panoramic views contribute to the airy and fresh atmosphere, which perfectly captures the spirit of eating at a gourmet establishment.
